A petición de Frost D. Favian, voy a poner una configuración del grub que puede servir.
Estos consejos sirven para cambiar por default el SO a elegir en Ubuntu, y demorar el tiempo más de 10 segundos:
1.-Primero abrimos un terminal
2.-Después, tecleamos sudo nano /boot/grub/menu.lst y tecleamos nuestra contraseña
3.-Se abrirá nano, y saldrá un documento parecido a este:

Para cambiar el SO que da por default, nos fijamos en las siguientes líneas:

Donde dice
default, cambiamos por el número en el que se encuentre el orden del SO al que queremos ir, en el caso de querer ser windows, por lo general está hasta el final del listado, le ponemos el numero 4, porque si no, distiguirá el
"Other operating Systems".
Luego, para cambiar el tiempo de entrada a algún SO, le cambiamos a las líneas:

Donde dice
timeout, le ponemos el valor numérico en segundos (yo le puse 99, por si me dan ganas de ir al baño, o para ir por algún bocadillo)
Otras cosas que se pueden cambiar, es el Nombre del SO al que quieren entrar, un ejemplo, yo hice esto:
